Good morning! Or is it? I’ve had a hard time dragging myself out of bed lately. As much as I want to have a great morning routine, my bed has won the battle lately! But today I’m going to give you one more (delicious) reason to look forward to getting up, with these make-ahead yogurt parfaits, made with Carnation Breakfast Essentials®.

I’ve had an especially difficult time in the mornings lately, since I’m pregnant with baby #4! Nausea hits me regularly, and even though I don’t always feel like eating, I usually feel better with a little something in my stomach. These parfaits, with their combination of yogurt, sweet berries, and crunchy granola are definitely something I look forward to.

Breakfast Parfait with Carnation

We have been trying to eat healthier in our house, and eating a nutritious breakfast is a great start to the day. My husband leaves early for work, and I’m usually scrambling around getting three kids up and ready for school drop-off. We need a quick-and-easy breakfast option, and these parfaits are it!

My favorite thing is that you can make these the night before, so all you have to do in the morning is grab one and go! Carnation Breakfast Essentials® provides calcium, protein, and other essential vitamins and minerals for a strong start to the day. You can have one on its own as a beverage, but there are lots of other ways to incorporate the Carnation Breakfast Essentials® into a unique breakfast recipe.

Carnation Breakfast Essentials

For this recipe we’ll be mixing the Classic French Vanilla Carnation Breakfast Essentials® into plain Greek yogurt, which turns the yogurt into more of a pudding texture. We got our 30-pack at Sam’s Club, in the Breakfast aisle.

Make-Ahead Yogurt Parfaits with Carnation Breakfast Essentials®

These parfaits can be made the night before and put in the fridge, so you can enjoy them first thing in the morning. They will stay fresh in the fridge for up to three days, so you can make three at once, or more if you have more family members to feed!

Also, you can make these in bulk and put some in the freezer. I’ll explain in the recipe instructions what to do differently if you’ll be freezing them.

Instructions

  1. Pour the 4 packs of Carnation Breakfast Essentials® into the Greek yogurt and mix them together.
  2. Layer about 2 oz of the yogurt mixture into the bottom of 8 parfait cups or small mason jars.
  3. Add a layer of frozen berries, about 1/4 cup.
  4. Add another layer of the yogurt mixture on top of the fruit, about 2 oz.
  5. Add a second layer of frozen berries, about 1/4 cup.
  6. Top with 1/3 cup of granola. (If you’ll be freezing any of the parfaits, do not add the granola now.)
  7. Set the parfaits in the fridge overnight and enjoy in the morning! Or put them in the freezer, and the night before you want to eat them, add the granola topping and put them in the fridge.

  • 32 oz plain Greek yogurt
  • 4 cups of frozen fruit
  • 2 and two-thirds cups of granola

Instructions

I used glass jars, can I freeze them in the glass jars or should i transfer them?

Yes, you should be fine, as long as you leave a little room at the top of the jar for expansion.
