Summertime and the weather is fine, and the pool party invitations are rolling in! If you are hosting your own pool party, or if you’re bringing a dish to a pool party potluck, you can really impress your guests with this Beach Ball Fruit Platter!
Making the beach ball fruit platter is really easy, especially if you have eager helpers. Your final product will look fantastic, but don’t get too attached to it, because it will be gone before long!
Beach Ball Fruit Platter Recipe
The Dip
Start with the dip. You can use anything you’d like! I decided to make a ricotta yogurt dip using La Romanella ricotta cheese, First Street sugar, Greek yogurt, and vanilla.
I wasn’t very exact with the ingredients; I threw in equal parts ricotta and yogurt (about 1/3 cup each), a tablespoon of sugar, and a teaspoon of vanilla, and mixed it all together.
The Fruit
For fruit, you can use anything you’d like, but the closer you can get to bright primary colors, the better!
I went shopping at Smart & Final for all of my ingredients. I got the fruit in their extensive produce section.
I grabbed the First Street sugar in the baking aisle, then in the dairy section I found the La Romanella ricotta cheese, Greek yogurt, and First Street cheese cubes, which I served separately. And which were delicious. And which I snacked on while making the fruit platter!
The Presentation
The trick to making the platter look 3D, is to offset the dip. Instead of putting it in the center of the platter, put it a little higher and to the left.
Then, add your fruit in curved sections, like in the collage below:
Even though the sections have different lengths and widths, make sure the top part of each section (the fruit touching the dip in the middle) is the same width. Also, each section should be directly across from another section, three pairs.
This beach ball fruit platter makes a perfect potluck dish for all of your summer pool parties. And with two kids who have summer birthdays, I know a little something about pool parties!
The fruit was a hit with my kids. And it’s a perfect refreshing treat for a hot day, for when you’re finished swimming, or in between cannon balls!
Put out some toothpicks to help the whole situation be less messy. My kids loved making blueberry and grape “lollipops.”
